- Campurkan air dan tepung, tutup dgn serbet, lalu autolyze selama 30 menit.
- Setelah 30 menit, masukkan starter. Aduk dgn cara dilipat. Jd menggunakan tangan ambil adonan dr bawah diangkat dan dilipat ke arah berlawanan. Jd ambil adonan dr bawah arah jam 12, dilipat ke arah jam 6. Begitu seterusnya sampai tercampur rata. Lalu diamkan lagi 30 menit..
- Setelah 30 menit, masukan garam. Aduk dengan cara yg sama spt mengaduk starter. Lalu diamkan selama 1 jam..
- Lalu mulai bulk ferment. 4x stretch & folds (bisa dilihat di YouTube caranya) dgn rentang 45 menit sekali. Setelah yg ke 4, istirahatkan adonan selama 1 jam.
- Setelah 1 jam, kita akan pre-shape adonan. Siapkan banneton / mangkok yg diberi tepung agar adonan tidak lengket. Lalu simpan adonan di kulkas sktr 16-24 jam.
- Esok harinya panaskan oven dan panci dutch oven kita (panci apa aja bole asal bisa ditutup dan kuat dengan suhu panas tinggi. Saya pakai panci keramik korea) dgn suhu 250 selama 30 menit..
- Setelah 30 menit, keluarkan panci dan keluarkan dough kita dr kulkas. Pindahkan ke panci, lalu scoring tutup dan segera masukkan kembali ke oven..
- Panggang selama 20 menit dgn panci tertutup, lalu angkat panci dan oven lagi selama 10-15 menit. Krn waltu scoring pisau saya kurang bagus, jd ear nya gak ada..
